Pierrick Bouley

Pierrick is part of an exciting, young generation of winemakers coming up in and around the still somewhat affordable village of Volnay. Coming from the decent stock of a six generations family estate and excellent tutorage under his parents Réyane & Pascal, Pierrick finally took the reins in 2014.

The estate comprises of 9ha of vines, of which 6ha are in Volnay, with holdings across six different premier crus. Pierrick works with a biodynamic philosophy which is neither fastidious or certified, but is the natural next step to his parents having stopped the use of chemicals in their vineyards in 2003. He has also eschewed any sort of deep ploughing but instead works with griffage and interceos. Similarly, his vines are not trimmed, but weaved, so as to preserve the shoot apex and avoid plant stress. He is also in trials currently to train the vines higher - around 1.8 metres - so as to provide more shade.

Pierrick destemms all of his fruit and opts for low extraction with gentle remontage work and just two to three pigeages. The wines spend one year in barrels aged between one and five years. Minimal sulphur is used with just a touch at racking and bottling - about 40 mg/l total. Even with his avant garde work in the vines, the wines that he is producing are classic and elegant with brilliant vibrancy and energy.
